Ingredients

  • 3 cups cooked shredded chicken
  • 8 ounces full-fat cream cheese softened
  • 1/2 cup ranch dressing
  • 1/2 cup buffalo wing sauce plus more to taste
  • 1 1/2 cups freshly grated sharp cheddar cheese divided
  • 2 tablespoons sliced green onions or chives optional
  • Blue cheese crumbles optional

Equipment

  • 1 8-inch square baking dish
  • 1 mixing bowl
  • 1 rubber spatula
  • 1 cheese grater

Method

  1. Heat the oven to 350°F. Lightly grease an 8-inch square or similar 2-quart baking dish.
  2. Stir the softened cream cheese until smooth. Mix in the ranch dressing and buffalo wing sauce.
  3. Fold in the shredded chicken and 1 cup of the cheddar. Spread the mixture in the dish and top with the remaining 1/2 cup cheddar.
  4. Bake for 20 to 25 minutes, until bubbling at the edges. Broil for 1 to 2 minutes only if you want extra browning.
  5. Rest for 5 minutes. Top with green onions, chives, or blue cheese and serve.

Notes

Slow cooker: Combine the mixture in a 2- to 3-quart slow cooker. Heat on LOW for 2 to 3 hours, stirring once or twice, then switch to WARM.
Storage: Cool leftovers, cover, and refrigerate for 3 to 4 days. Reheat gently in the microwave or a 325°F oven until hot.
